Role

  • Ambassador- Ensure Chick-fil-A 89th & Shea’s Quality visions are reality all day every day
  • Developer- Develop Back of House leadership to further capacity of the business
  • Cast Vision - Create and maintain strategies to ensure faithful stewardship of Back of House systems

Task Orientation

  • Ensure Back of House is covered at all times
  • Prep, line, etc
  • Complete disciplinary action according to our handbook and document such action.
  • Approve and maintain the quality of opening and closing procedures by performing walk throughs with back of house leadership
  • Coach Team Leaders and Managers to consistently follow all Chick-fil-A processes and procedures
  • Lean Chicken Rotation, Lean Chicken Entrees, Lean Food Preparation, Lean Oil, etc.
  • Grooming, cell phones, uniforms
  • Maintain proficiency in all positions in back of house, including maintenance
  • Maintain Servsafe Certification and understand local and federal health regulations
  • Eradicate irrational food waste and oversee documentation of daily waste
  • Ensure correct use of labeling, holding, timing, and recipes in the back of house.
  • Ensure food presentation at utmost quality from portioning, to assembly, to packaging.
  • Facilitate End of Month Inventory Count
  • Perform table touch ins to gain customer feedback on our product
  • 2 hours/week to planning
  • Ensure Team Leaders are complying with Jolt checklists
  • Make necessary Back of House adjustments to checklists
  • Maintain Inventory Travel Path and Order Guide
  • Manage communication and scheduling for Back of House Vendors
  • Bread, Produce, QCD, maintenance vendors, etc.
  • Play a positive role in guest recovery
  • Open availability Monday through Saturday
  • Minimum of 40 hours/week

 

Expected Results

Daily

  • Ensure Back of House leadership completes eRQA and Daily Safe
  • Game plan for corrective actions found in both

Weekly

  • Maintain a pulse on the health of the Back of House team and take care of any labor issues
  • Ensure cleanliness of Back of House by maintaining and updating cleaning checklists
  • Ensure inventory levels are appropriate and proper rotation is taking place
  • Maintain and adjust Inventory Travel Path as needed

Monthly

  • Communicate monthly “focus” to Operator & Director Team
  • Set new goals for Food Cost & CEMs
  • Have a One-on-One with the Operator to discuss personal & business development
  • Perform One-on-Ones with all Back of House Leadership
  • Facilitate a Back of House Leadership Meeting communicating monthly focus, goals, strategy, performance updates, system updates, etc.
  • Perform End of Month Inventory Count

Quarterly

  • Perform unannounced mock ROE assessment
  • Strategize with Operator on purposed future monthly focuses

Scorecard

  • Food Cost: < 0.25 % Positive Gap
  • ROE: > 92% Production Environment
  • CEMs: > 2% above Arizona Central Market
  • eRQA: Daily execution and deliberate action based on results
  • SAFE: Daily execution and deliberate action based on results

Skills Necessary

  • Develop leaders so they are operating as a motivated, high performance team that embodies our vision.  This should happen every day through setting goals and providing feedback on performance.
  • Consult with Talent Director concerning labor management in back of house
  • Consult with Financial Return Director to set and maintain food cost goals
  • Create focus areas to drive influence with the team
  • Oversee and cast vision for Back of House related metrics in our Customer Experience Monitoring.
  • Taste of Food, Speed of Service, Portion Size, Temperature, Order Accuracy, etc.
  • Maintain eTrain certification in all BOH areas
  • Ensure BOH Team Leaders & Managers maintain eTrain certification in all BOH areas
  • Coach Trainers and Leaders as they train team members in BOH areas
  • Communicate ROE findings in BOH Leadership meeting and vision cast specific strategies for improvement
  • Ensure safety by following procedures
  • Create and maintain culture of productivity in the Back of House
  • Complete monthly One-on-One meetings with Back of House leaderhip
  • Maintain business development focus as well as professional development focus for each Back of House leader
  • Consult with Talent Director on new hire performance
  • Consult with Catering Leaders on delivery execution
